She likes what she sees and she wants to see even more, see clearer, and with more focus. To do this, she subconsciously opens her eyes larger.
She wants to look more appealing to you so she makes her eyes larger, thus making herself appear prettier.

Larger eyes are generally an appealing facial feature, and all women wish to look more attractive, especially to men they’re interested in.
